O-tuber

This sulfite-free, slightly sweet wine is produced by Manuel Choqque, an agronomist who has dedicated his life to growing and developing myriad native potatoes and Andean tubers at his family farm in Huatata, Chinchero where he painstakingly hand pollinates his hybrids. To make this rare libation, Manuel applies an age-old ripening process, historically used by Cuzco’s ancient civilizations, to concentrate the sugars.

O-tuber is a fermented drink made with organic ocas (sweet oxalis tubers) that grow in Cuzco at 3.700 meters above sea level.
