Before a product becomes suitable to be used as a gastronomic proposal's ingredient, it undergoes multiple stages, usually invisible. Each product hides stories and challenges that our producers overcome, which could not be understood just by eating. We want to know the full contexts of these products; to thoroughly know these stories and challenges, and improve our understanding of the inputs we work with.
We travel to the producers we work with to understand their perspectives, know the process and assure quality. We exchange knowledge through the different stages of the food chain and incorporate such knowledge in our gastronomic concepts. We also share this knowledge with our team and visitors to highlight the producers' work.
This helps us to understand a product in its full context.
